Stuffed Mushrooms

If you like mushrooms, you will enjoy this!


12 large fresh mushrooms
1/4 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
2 TBSP finely chopped green onion
1/4 cup nonfat sour cream


Preheat the broiler.
Remove stems from mushrooms and chop finely.
In a bowl, combine mushrooms, cheese, breadcrumbs, and onion.
Stir in some sour cream and mix well.
Stuff caps of mushrooms with mixture.
Place stuffed mushrooms on a broiler pan and broil until tender and browned.

Serves 4 ad appetizer or 2 as light lunch.
