A delicious birthday treat my mom baked for my brother, Bill, because he didn't like cake! Her friend Celia gave her the recipe and we have all been very thankful!
1 cup flour
1/2 cup margarine or butter
1/4 cup sugar
1 TBSP lemon
1 egg yolk
5 blocks of 8 oz cream cheese
1 3/4 cup sugar
3 TBSP flour
1 tsp salt
1 TBSP orange juice
1 TBSP lemon juice
1/4 tsp salt
2 egg yolks
1/4 cup whipping cream
2/4 cup chilled whipping cream
1/3 cup slivered almonds (optional)
Heat oven to 400 degrees
Lightly grease 9" springform pan - remove bottom.
Mix 1 cup flour, 1/4 cup sugar, 1 TBSP lemon, 1 egg yolk w/hands.
Place 1/3 cup of mix on bottom of pan and place on cookie sheet - Bake 8-10 mins. and cool.
Assemble bottom and side of pan - secure sides. Press remaining mix up sides of pan.
Heat oven to 475 degrees.
Beat cream cheese, 1 3/4 cup sugar, 3 TBSP flour, orange juice, lemon, salt, 2 eggs until smooth. Continue beating , add remaining eggs, 2 egg yolks - 1 at a time. Beat in 1/4 cup whipping cream. Pour in pan - Bake 15 minutes.
Reduce oven to 200 degrees.
Bake 1 hour. Turn off oven and leave in oven 15 minutes. Remove, cover, refrigerate 12 hours.
Loosen sides of pan and remove.
Beat 3/4 cup of chilled whipping cream in chilled bowl until stiff. Put on top of cheesecake and enjoy!
