Didi's Mac & Cheese

1 lb. Macaroni
1 8 oz. White Extra Sharp Cheddar
1 8 oz. Monterey Jack
1 8 oz. Colby

Note: Cut all these in chunks and toss together in a bowl.

1 jar Marie's Chunky Blue Cheese
3 whole eggs
1 cup milk
1/2 stick of butter, cut into slices

Salt, pepper, garlic powder to taste


Cook macaroni and drain.
Preheat oven to 350 degrees.
Grease a 9 x 13 baking dish.

Layer 1:
4 slices of butter
Layer 2:
cover bottom of pan with macaroni and sprinkle with salt, pepper, garlic powder
Layer 3:
cover macaroni with a layer of cheese mixture.
Repeat the layers until you fill the dish.
In a bowl, combine blue cheese, eggs, and milk. Whisk or beat mixture together until well-blended. Add to dish. Mixture should fill the dish to about 1/2" from top - add more milk if needed.
Apply cooking spray to one side of aluminum foil, then cover the dish to keep the cheese from sticking.
Bake: 350 degrees for 45 minutes...remove foil and bake uncovered for an additional 15 minutes or until cheese is golden brown.
